The Gray Label edition comprises bourbons of different ages, originating from five distinct mash bills. The whiskies are then married and transferred into casks made from 36-month-old, air-dried staves. The air-drying process is slow, costly and labour-intensive but, according to Barrell, results in more complex flavours. On the palate, there are notes of melon, milk chocolate and beeswax, with sweet tea, rose jelly and cappuccino on the finish.
